Cherry Tomato Toasts + Tofu Kimchi Soup

I DIDN’T eat much today.

In the morning I only had a big mug of coffee and a slice of banana bread. I got hungry at around 5 in the afternoon so I made myself some cherry tomato toasts.

We didn’t have non-dairy cream cheese at home so I used regular cream cheese spread as palaman, then I added sautéed cherry tomatoes on top. Masarap siya beh!

I loved the toasts so much I made a second batch (one “batch” makes for two slices of bread). I will try making these again but with fresh thyme and non-dairy cream cheese, if I ever find one.

In the evening it was hella cold so I decided to make tofu kimchi soup. I also cooked sinangag for my family but my mom specifically requested that I add chicken strips and hotdogs on it. I was good with the soup.

This is the second time I’m making this soup. The other day I put too much hot pepper paste so it was a little too spicy for me. I also didn’t have Korean red chili powder so I used regular chili flakes instead. My soup would probably look a lot redder with more red paste and red powder.

Otherwise, the soup tasted dope. Most restaurants use soft tofu but medium-firm tofu works just fine for me. I will buy another block of medium-firm tofu this week; I will definitely make this soup again.

      “Do you make your own kimchi rin?” — Girl, wala pa tayo d’yan. Hahaha. But if this pandemic gets extended for yet another year, yeah, I’d probably learn how to make one. Choz! Hahaha.

        Whoqa. Aabangan ko yang post. This pandemic has a good chance of being extended. My sister makes it. It’s passable for samgyeopsal and kimchi nights. Pero iba pa rin talaga yung Korean-made talaga. 😀
